Chaga Chai Latte inspired by Inga Bylinkina
We came across this delicious and healthy festive recipe by Inga Bylinkina during a weekend course with Academy Healing Nutrition, where she taught the wonders of Traditional Chinese Medicine. We bonded over our mutual admiration for the Chaga mushroom and our Russian roots. Inga is a practicing herbalist, healing nutrition coach and energy healer. She grew up in the Russian countryside, immersed in herbal folklore and old-school healing traditions. Since childhood, Inga developed a fondness for plant medicine and is now a passionate advocate of natural healing and seasonally attuned holistic approach to health and life.
In line with our love for Chaga, she shared one of her beautiful potions with us. It's perfect for the whole family. She also stressed the importance of when using Chaga chunks that one let's them simmer for a long time to extract all the goodness from the mushroom. Our Superior Chaga is already extracted and therefore doesn't require this long extraction process.
Recipe for 2:
- 1.5 cup water
- 1 cup nut milk (e.g. oat, almond, hazelnut)
- 1tsp Superior Chaga
- 1/2 tsp Ginger powder, or 2cm fresh ginger cut into pieces
- 1/2 tsp Ceylon Cinnamon powder, or 1 stick
- 1/2 tsp Whole Cloves
- 1/2 tsp Black peppercorns or 1 pinch of black pepper powder
- 1/2 tsp Cardamom pods slightly crushed
- 2 tsp coconut sugar
- a pinch of Himalayan salt
- Optional: add 2tsp Lucuma powder
- 1 pinch of Nutmeg for each cup
Add all the ingredients to a pot and slowly bring it to boil, let it simmer until all the wonderful flavours from the spices have been extracted (about 10 minutes). Pour into cups, garnish with a sprinkle of nutmeg.
Alternatively, instead of all the individual ingredients, you can add a 1tbsp Golden Turmeric Chai (with black tea) or 1tsp Golden Mylk Chai.
