Recipe for delicious raw energy bars packed with tangy goodness of Baobab and the healing spice turmeric! Perfect for your post-yoga treat!
INGREDIENTS
100 gms Dried Mango
50 gms dates
100 gms Brazil Nuts
50 gms Rolled Oats
1 tsp turmeric powder
1/2 tsp black pepper powder
1/2 Tbsp Baobab Powder (optional)
Toppings: Toasted Sunflower seeds (optional)
METHOD
Soak the dried mango and dates in one cup of hot water for 15 minutes.
Place the brazil nuts in a food processor and process till it becomes a rough powder. Add oats and whizz it one more time. The oats should be in pieces and not as a powder. Remove this nut and oat mix from the processor and set aside.
Drain the water from the dried fruit and add the dried fruit to the processor. Process till completely broken down and a becomes a rough paste.
At this stage add the nut and oat mix, the turmeric, pepper and baobab powder and process till it is well combined and becomes a ball.
Line a square tine with parchment paper or cling film and press down this mango turmeric mix. Spread it to the thickness of your preference.
Using the back of a wet spoon or a wet frosting knife flatten the mix to make it as even as possible.
Sprinkle over with the sunflower seeds and press down again.
Place in a freezer for two hours till set. Using a sharp knife slice into bars.
Keep in an air tight box. Lasts longer in a refrigerator.
